Cultivation method: Planted and grown in rows, Guyot method of pruning, 80cm distance between the plants, 2,5 metres between each row, density of 5000 vines/ha.
Harvest: manual
Vinification: Fermantation occurs in vitrified cement vats with controlled temperature and brief maceration of the wine’s solid parts ( skins and twigs), so as to reduce the amount of the grapes’ tannin. Total absence of filtrations until bottling.
Colour: Pale ruby red with amber reflections
Bouquet: Spicy with traces of dogrose
Flavour: Dry, pleasant presence of tannins and a good after-taste.
Best accompanied by: Ideal with cold meats, soups and light first courses. Serve at 16°-18° in medium sized wine glasses.
